When you made a big batch of kimchi, you have to find a way to use it and knowing me I don't like to eat it as it, I am always looking for trying new ways to eat it. So before I added in Quinoa, this time it's in Pancakes.
These are a very famous Korean dish which has soaked and grinds mung beans, pork, scallions, and kimchi and makes pancakes have it with a side of soya sauce flavor with vinegar, sugar and Korean hot sauce. I cut a short cut, instead of having green mung beans, I soaked yellow spilt mung beans and make a paste of it, added kimchi, a little bit of hot sauce and made pancakes. Still, I didn't have scallions in the house, I omitted it but if you have it, please add it.
Ingredients
1 cup of Soaked and grind yellow mung or green mung beans
1 cup of chopped Kimchi
2 cut scallions
2 tsp. Soya sauce
1 tsp. Garlic powder or 1 clove of garlic finely chopped
1 tsp. of Sesame oil
Method :
Soaked and grind mung beans with very less water, we need thick batter the way we make besan chilla.
Add kimchi, if its too big pieces, cut it in bite size.
Add the rest of the ingredients and check the seasoning and adjust accordingly your taste.
Heat a nonstick flat pan, add little oil and ladle the mixture into the pan, and try to make it in a circle.
And make it is not so thick, not so thin layer.
Cook it on one side and then flip it.
Cook on another side also and take it out on paper towel.
Finish rest and enjoy hot with soya sauce mixed with vinegar, hot sauce, sesame seeds in it.
