Chips Ahoy Cookie Ice Cream without Ice cream Maker

Since last year I was thinking to make homemade ice cream, made gelato and loved it but wanted to try regular ice cream, so finally this year I just made it. I got my heavy cream and condensed milk and then I look into the pantry and couldn't find Oreo cookies and I was about postponed my idea of making ice cream. But then saw chips ahoy box so I thought why not to make with these cookies. It's just 3 ingredients, whip it together and put it in the freezer, 4 hours later, you will have delicious ice cream without any ice crystals or hard. It was perfectly soft, perfect sweet in taste and above all kids had a blast eating it. So what are you waiting for, go ahead and make your family favorite ice cream in no time. Heavy cream and condensed milk ratio are the same for the base, you can add different ingredients and make your own, after that I made my favorite cashew and dried grapes ice cream.




Ingredients 

2 cups of Heavy cream
3/4 can of condensed milk, it was fine with my taste, you can adjust sweetness as per your liking
10-12 Chips Ahoy or Oreo Cookies crumbled
Few drops of Vanilla Essence

Method : 

Whip the heavy cream and condensed milk in stand mixture till it becomes fluffy.



Take it out in ice cream pan, mix in crushed cookies and Vanilla essence. 






Don't make too tiny pieces, leave it big chunks

Top it off with some cookies too.

Cover and Freeze it and take it out after 4 hours and you will have nice ice cream ready to enjoy and beat the heat.

One Pan Chocolate Chip Bread (loaf)

I don't know, I am still deciding should I call it bread or cake? But when the final outcome is this good, I can say just enjoy it, after all, what's in the name. On a serious note, the texture is in between bread and cake and it goes very well with warm bread with plain old vanilla ice cream.

You can put as much chocolate chips you like, measurement is just there. It totally depends on your taste and kids demand.

I made this one and leave it outside to get cold, kids and hubby saw it and it was gone in a matter of time. So now I have to make a new batch just to enjoy it and savor it.




Ingredients : 

2 cups Whole Wheat Flour or AP flour
3/4 cup sugar
1/2 tsp each  baking soda & Baking powder
1/2 tsp salt
6 tbsp room temp butter (unsalted)
3 eggs
1 cup buttermilk or whole milk
1 tbsp vanilla extract (try to use real, not fake)
1/2 cup Nestle Chocolate chips

Method : 

Preheat oven to 350 F and grease 9 x 3 loaf pan.

Cream together butter and sugar in a large mixing bowl until its light and fluffy.

Then add eggs and vanilla, mix it well.  Stir in flour, salt, baking powder, and baking soda.

finally, add buttermilk or milk.

Fold in chocolate chips in it.



 Pour the battered in the greased pan.





Bake it at 350 for 50-60 minutes, until a toothpick comes out clean.

Carefully remove your bread and allow it cool down for 10 minutes.

After that take it out and put it on a cooling rack and when it's completely cool, slice it and enjoy as is or with ice cream or a hot cup of joe.

Garlicky Stir Fry Tofu

I don't believe that there is anyway its too much garlic in any dish? the more garlic, it tastes better.  This dish is an ultimate homage to garlic lovers like me. Any Tofu haters will go over and over again with this dish. I have used almost the whole garlic bulb for this recipe. You can use as per your liking but if you used less, it's not that garlicky which we are looking for. I had it with zoodles but you can surely make white rice to clean out that amazing garlic sauce. 




Ingredients : 

1 Block of Firm Tofu cut in cubes
1/2 cup water
1/4 cup Tamari sauce for vegan or soya sauce
2 tbsp Maple syrup
1 tbsp ground black pepper
2 tsp cornstarch
2 tbsp grated ginger
4 tbsp oil
1 small red onion
1 Red capsicum in big chunks
1 Thai green chilies chopped
1 bulb of garlic approx. 10 big cloves - grated


Method :

Cut the tofu in small cubes. Take a big pan, add 1 tbsp oil and put the tofu in one layer. Make it brown on all sides. Keep it aside.


Chop all the vegetables and keep it aside.


Make a sauce with water, tamari sauce, maple syrup, black pepper, cornstarch, ginger. Whisk together and keep it aside.

In a pan, add oil and heat it up to medium-high heat. 

Add onion, green chili and saute for 4 minutes till its soft. 

Add garlic and cook till it's fragrant, keep on stirring it, you don't want burn garlic. 

Add tofu and red capsicum. 

Mix it nicely. 

Slowly pour the soy sauce mixture and stir until combined. Because of the corn starch, the sauce will thicken and coat the tofu which we want. 

The more it stays on heat, the thicker it will get, so keep an eye of sauce and when it reaches your desired consistency, turn off the gas. 

If you want you garnished with green onions, sprouts or sesame seeds.

Serve it hot with steamed rice, I had it with zoodles. 














You can have this just as an appetizer also. Just put toothpicks on the side and enjoy as it is.

Naan Bowl - Soy Chorizo and Jeera Rice - Vegetarian

We see smoothie bowls, fruit bowls, burrito bowl, buddha's bowl why not our own Indian way of serving food in the bowl? Here is my version of Naan bowl with soy chorizo and Jeera rice on top of naan which I pressed between two bowls to give a shape of a bowl.  Here I have used ready made bowl but if you want you can make fresh one and use it. I have already made soy chorizo before but that time I have used potatoes so this time I made it with boiled eggs, you can omit that and make vegetarian also. I served it with Raita if you want you can omit also. 

When everything is ready, this dish is very different to enjoy it, presentation wise. You can make it with dry chicken khema  or Paneer bhurjee is also good. 



Ingredients : 

4 Ready-made naan
1 cup Soaked Rice
1 tsp. Jeera
Salt to taste
1 tsp. oil

Method : 

Cook Chorizo as per the link is given. You can substitute with eggs instead of potatoes or make paneer bhurjee. 

















In a pot,  add oil, when it's hot, add jeera in it, when it changes the color, add rice and mix it. 

Add enough water to cook the rice, add salt and prepare rice. 

Heat up the pan for naan. 

I have used frozen naan so I put it from freezer to hot pan, add little butter and cook on both sides. 

when it's cooked, take two circle bowl. Put naan on one bowl and pressed it with another bowl. so its shaped in a bowl.

Keep it for 5 minutes till it forms the shape. 

Take it out naan, on one side, put the cooked rice and on other side put the cooked chorizo. on the side, you can serve it raita. 

You can put naan bowl in a dish and enjoy with friends.
