Easy 3 ingredients Strawberry Mousse

I am always looking for easy dessert recipes since I like to eat and not wait. This is easy, delicious and good for any party where you have to feed lot of people. You don't have to bake this mousse so its perfect for hot summer days. Just need strawberries, whipped cream and sugar and done. First make puree of strawberries with some sugar, add half the puree in whipped cream and half on the cup and chill it and enjoy it. I made this on Valentine's day for our dessert. And it was a hit, kids loved it since now a days strawberries are in full season, kids love to eat it with Nutella anyways so I just added in whipped cream and its done.



Ingredients : 

16 Strawberries
Sugar as per taste
1 tub of whipped cream 8 oz.
Extra strawberries for toppings

Method : 

Take 14 strawberries and washed them and cut the top green part and put it in blender with sugar in it.

Make a fine puree.





Remove half a cup of puree and leave it aside.

You can use bowls or tall glass, I used bowls.

Mix whipped cream and puree nicely.




Divide that leftover 1/2 cup leftover puree in your serving bowl.

and then top it off with whipped cream mixture.

Chill it for 2 hours and before serving cut the fresh strawberries and put it on top and enjoy.

I have made 8 bowls of mousse from this recipe.

Chips Ahoy Cookie Ice Cream without Ice cream Maker

Since last year I was thinking to make homemade ice cream, made gelato and loved it but wanted to try regular ice cream, so finally this year I just made it. I got my heavy cream and condensed milk and then I look into the pantry and couldn't find Oreo cookies and I was about postponed my idea of making ice cream. But then saw chips ahoy box so I thought why not to make with these cookies. It's just 3 ingredients, whip it together and put it in the freezer, 4 hours later, you will have delicious ice cream without any ice crystals or hard. It was perfectly soft, perfect sweet in taste and above all kids had a blast eating it. So what are you waiting for, go ahead and make your family favorite ice cream in no time. Heavy cream and condensed milk ratio are the same for the base, you can add different ingredients and make your own, after that I made my favorite cashew and dried grapes ice cream.




Ingredients 

2 cups of Heavy cream
3/4 can of condensed milk, it was fine with my taste, you can adjust sweetness as per your liking
10-12 Chips Ahoy or Oreo Cookies crumbled
Few drops of Vanilla Essence

Method : 

Whip the heavy cream and condensed milk in stand mixture till it becomes fluffy.



Take it out in ice cream pan, mix in crushed cookies and Vanilla essence. 






Don't make too tiny pieces, leave it big chunks

Top it off with some cookies too.

Cover and Freeze it and take it out after 4 hours and you will have nice ice cream ready to enjoy and beat the heat.

One Pan Chocolate Chip Bread (loaf)

I don't know, I am still deciding should I call it bread or cake? But when the final outcome is this good, I can say just enjoy it, after all, what's in the name. On a serious note, the texture is in between bread and cake and it goes very well with warm bread with plain old vanilla ice cream.

You can put as much chocolate chips you like, measurement is just there. It totally depends on your taste and kids demand.

I made this one and leave it outside to get cold, kids and hubby saw it and it was gone in a matter of time. So now I have to make a new batch just to enjoy it and savor it.




Ingredients : 

2 cups Whole Wheat Flour or AP flour
3/4 cup sugar
1/2 tsp each  baking soda & Baking powder
1/2 tsp salt
6 tbsp room temp butter (unsalted)
3 eggs
1 cup buttermilk or whole milk
1 tbsp vanilla extract (try to use real, not fake)
1/2 cup Nestle Chocolate chips

Method : 

Preheat oven to 350 F and grease 9 x 3 loaf pan.

Cream together butter and sugar in a large mixing bowl until its light and fluffy.

Then add eggs and vanilla, mix it well.  Stir in flour, salt, baking powder, and baking soda.

finally, add buttermilk or milk.

Fold in chocolate chips in it.



 Pour the battered in the greased pan.





Bake it at 350 for 50-60 minutes, until a toothpick comes out clean.

Carefully remove your bread and allow it cool down for 10 minutes.

After that take it out and put it on a cooling rack and when it's completely cool, slice it and enjoy as is or with ice cream or a hot cup of joe.

Vegan - Pressure cook - Gajar Halwa (Carrot Porridge)

This is the perfect season to use winter carrot. I remember in India, we get nice and long and sweet carrots in winter, where in the US it's available year-round but no taste of what so ever. But we can still use it in regular use or something special like this halwa. It's your regular carrot halwa but with a twist. We don't have time to stand in front of gas and cook and stir halwa till milk and water from carrot goes away. So easy way to indulge in this sweet is put everything in a pressure cooker and 2-3 whistle and you are done. The best part is you can make it vegan also, I have used almond milk in this one and still it is as yummy as ever. If you prefer to make it with regular full-fat milk, you can use that too. If you have evaporated milk, by all means, use that and you will have nice creamy halwa in under 10 minutes. The whole point of making this in the cooker is not to shred, just finely chopped in the same size and dump everything in it.






Ingredients :

3 Peeled and finely chopped or shredded carrot
1/2 cup your choice of milk, I used almond milk
5 tbsp sugar or depend upon your likings
2 tsp. Green Cardamom powder
Few Raisins, chopped cashews, almonds, pistachio
1 tbsp vegan Ghee / Vegan butter

Method:

Take your pressure cooker, add ghee in it, add raisins in it, cook for 30 seconds, add carrots and mix it, add milk and cardamom powder.

Cover it and put the whistle on it.

Keep the flame on low to medium and let it cook till 3 whistles.

Let the air go out by itself.

Open the lid and check if you see it has liquid, turn on the gas and make it dry or as per your liking, add cashews, pistachio in it.

When it's done, take it out in a serving bowl and add finely grated almonds and enjoy hot or cold as per your desire.

Peanut Butter Blossom

This is the easiest way to make cookies and if you don't have any peanut/nut allergy issues, its the best cookies and the easiest cookies you ever made. Just have the dough ready, bake it and take it, put the kisses on top while it's still warm and cool it and enjoy it. Its perfect for the gift or just to have it with tea or coffee or for kids with hot chocolate.




Ingredients : 

12 Hershey's Milk chocolate Kisses
1/2 cup butter
3/4 cup peanut butter
1/3 cup each regular sugar and brown sugar
1 egg
2 tbsp Milk
1 tsp Vanilla extract
1 1/2 cup AP Flour
1 tsp Baking soda
1/2 tsp Salt


Method:

Heat oven to 375 F.

Remove kisses from wrappers, keep it aside.

Beat peanut butter and butter in a bowl until its blended. Add both the sugar, beat until fluffy.

Add egg, milk, and vanilla beat well.

Stir flour, baking soda and salt, and gradually add peanut butter mixture.

Shape dough into 1 inch balls, place on ungreased cookie sheet.

Bake 8 to 10 minutes or until lightly browned.

Take it out and press a chocolate into center of each cookie.

Transfer it on the cookie sheet to wire rack. Cool completely.

This will make 48 cookies.
