Regular pesto pasta, been there and eat it, need something new. Well, here it is, add some cheese in it and baked it and have it. You will love it because I love it too. Nothing much to do, make pesto , with any greens and nuts, olive oil, parmesan cheese . Done. Add pasta with some vegetables in it and baked it. If you like it , add some heavy cream in sauce and you will have cheesy creamy pesto pasta. Perfect for weeknight diner when you have to put food in dish on dinner table quickly.
Ingredients for Pesto :
1 bunch of Basil leaves (6-7 big strings of basil)
1/4 cup roasted pine nuts
3 cloves of Garlic
1/4 cup olive oil
3 tbsp Parmesan cheese
salt and lime juice as per taste
freshly cracked black pepper
Method:
First chopped basil and pine nuts in grinder. Then add garlic, cheese, salt and lime juice.
Then add olive oil and make a fine puree.
You will get bright green color.
Take it in bowl and keep it aside. Check for the seasoning.
Makes 1 cup of pesto. good for two people.
For Pasta :
1/2 box WW penne Pasta (or you choice of Pasta)
5-6 Asparagus, chopped
4-5 chopped garlic
1 carrot chopped
1 green capsicum chopped
1 cup pesto
2 cups mozzarella cheese
2 tbsp. olive oil
Method:
Cook pasta as per the directions and keep it aside.
Preheat the oven at 375F.
Heat a pan, add olive oil , add garlic in it and cook for 1 minute.
Add vegetables and cook for a minute or two.
Add pesto and pasta and cook for 3 minutes.
At this time you can add heavy milk to make it creamy too and have it as it is without baking too.
Take it out on baking dish and pour pasta in that dish with cheese.
Bake till cheese is melted and serve hot with garlic bread or as it is.

ReplyDeleteYou so can't beat pesto for deliciousness and versitility, I make and eat it virtually every week, and usually with veggies stirred through too and maybe a wee spoon of creme fraiche.
