Japchae (chap chae) - Famous Korean Noodle dish

Japchae  is perhaps the most famous Korean noodle dish.  You can eat this dish alone or with some rice. This can be a great vegetarian dish as well . The key to making flavorful Japchae is seasoning each ingredient separately. Let me show you how you can make this beautiful dish to impress your significant others. This is one of my favorite Korean dish after their rice. That dish recipe maybe later.

This recipe is for my sister, who is my teacher after my mom, she has an amazing blog too and she is world traveler so who knows more cuisine then her, not me.  Let's start first with this one. Are you ready?

Ingredients:



10 oz glass noodles (sweet potato Starch Noodles)
10  big steams of  Korean spinach, trimmed and cleaned
1 medium carrot, cut into  thick sticks
1 small onion, thinly sliced
1 each Red and Green peppers Match sticks
6 shitaki mushrooms, sliced (optional) I didnot use it
few soya sprouts.
For the Peppers & (mushroom) seasoning :
1 Tbsp soy sauce, 1tsp sugar, 1 tsp chopped garlic, 1 tsp sesame oil
For the spinach seasoning :
1/2 tsp salt, 1/2 tsp sugar, 1 tsp sesame oil
For the noodle seasoning :
3 Tbsp soy sauce, 2 tsp sugar, 2 Tbsp sesame oil, 2 Tbsp sesame seeds(roasted - optional), 1t pepper

blanch spinach and squeeze and chop it.

Sweet potato Noodles
Method:
Boil water in a pot. Add spinach and blanch for 1 minutes. Rinse in cold water and squeeze. chop it up and put in dish. If you are using mushroom blanch them too and then cut it and season it with spinach seasoning.
Saute onion and carrot separately with some salt and sugar to taste over medium heat.
Meanwhile boil water in pot and add the noodles and stir them first. Cook for them for about 6 minutes or as per package directions.
Rinse them under cold water. Drain the noodles. Cut the noodles if you desire. I prefer to cut it.
Cook noodles in a pan on medium heat from leftover flavors. Add the noodles seasoning and toss them well.
Let all ingredients to cool down to room temp.
Toss noodles with vegetables with hand. Adjust the seasoning for your taste. sprinkle sprouts on top.
Serve at room temperature . you can not eat this noodles hot or warm, otherwise it taste very chewy.

  15. Delicious looking noodles. We have a lot of Chinese immigrants here helping to build the railway and other national developments. So now we have a separate section selling chinese products. They sell potato starch noodles and I've always wondered what they do with them as they look transparent. I guess if you have used sweet potato noodle then potato ones may work just as well.

    1. try it maybe that's their version of sweet potato noodles, just follow thru packet directions for cooking, because its very chewy in the taste and if not cooked perfectly it will ruin your dish.
