Methi Paneer Rajma curry / Fenugreek Cottage cheese and Dark Red Kidney beans curry

Again me methi freak with one more dish with Methi. When ever I make Rajma I always add kasoori methi so this time I think why not to make it with fresh leaves of Methi and add Paneer and make a wholesome dish. You can use any greens with Rajma or You can use Chickpeas too. Possibilities are endless once you think about it. Here in US we have nice caned beans so when ever its on sale I store it so if one fine morning If I forgot to soak Rajma day before and I wanted to make it I use it caned ones. Otherwise I soaked and boiled all my chickpeas and black beans and froze it so when ever I have to make it , take it out and put it in the gravy. Enough chit chat lets cook.

Ingredients:

2 cans of Dark Red Kidney Beans (Rajma boiled and ready to go)
1 cup washed and chopped methi leaves (if you don't like bitterness adjust the methi quantity)
2 tbsp of tomato puree
10-15 small pieces of paneer (you can fry it and add it , I use it as it is)
1 big onion finely chopped
1 tsp each ginger, garlic and green chili paste
1 1/2 tsp chana masala ( I use Badshah)
2 tsp Red chili powder
1 tsp Turmeric powder
1 tsp cumin coriander powder
salt to taste
3 tsp of oil

Method:
Wash and clean can beans and put it aside.
If you are using dry one, soaked it overnight and pressure cook it until its soft and nice.
Heat a non stick pan. Add oil in it.
Add onion and cook till its brown color.
Add tomato puree along with ginger, garlic and chili paste and all powder masalas.
Mix and cook for 2 minutes.
Add Rajma and methi and enough water to cook Kidney beans so it absorbs the flavor.
Add salt and paneer and cook for 3 more minutes.
Whole thing should be done in 10 minutes on medium flame.
 Serve hot with parathas or Jeera Rice along with some Raita and fry green chilies and Raw Onion.

  3. I store canned beans too, in case and for emergency purpose. Sometimes I prefer the canned ones because its time saving. Love the combo of beans, paneer, tomato puree and spices, that great and incredible flavors.
