I love all root vegetables, still have to try a lot. Coming here in US saw vegetables which was never seen it in India when I was there 15 years back. That time it was not this much globalization of things so didn't explored much. But after coming here tried a lot of different cuisines and for that a lot of different vegetables too. Yam is not alien for me, my mom used to make best curry out of this vegetables. So I am following her steps too. I always buy some of the vegetables frozen because its cheaper and last long because most of the vegetables are only consume by me so I make my portion size dish and leave rest back in the freezer. Particularly about Yam , here we got sometimes too big rounds of vegetables , which is not good for me. I have to peel it and then froze it , so why waste time in peeling and chopping when its available there. I am also afraid of Yam to cut it too, once I heard that if you don't wash your hands properly after cutting yam, you whole body itches where ever you touch it, so better safe than sorry.
Ingredients :
1 cup frozen Yam (you can use fresh one too)
1 potatoes cut in cubes
1/2 chopped onion
fresh ground ginger, garlic and green chili paste
(take 4 cloves of garlic, 2 green chilies, 1 inch ginger piece)
1 tbsp. tomato puree
1 tsp. turmeric powder
1 tsp. garam masala powder
1 1/2 tsp. red chili powder
salt to taste
2 tsp. oil
Method:
Heat a non stick pan, add oil in it.
Add onion and cook till its little pink.
Add ginger, garlic, chili paste, puree, turmeric powder, garam masala, red chili powder and cook for a minute.
Add yam and potatoes and add cup of water.
Cover and let it cook them till potatoes are cooked.
If you wanted to more gravy add water more but if you are like me who likes masala to coat the vegetables and make it dry.
When its done, Serve hot with roti or rice or as a side dish to your gravy dish.
