This is the easiest and yummiest rice preparation I know. Its quick and goes very well with as a side to pav bhaji , chole or eat it as it is. You can make it from fresh cooked and then cold rice or leftover rice too. The key is rice has to be cold. You need nice and little soft tomatoes to make this rice so cooking time gets reduced. If you firm tomatoes then it will take little longer to cook tomatoes.
Ingredients :
3 cups cooked and cold basmati rice
1 small onions finely chopped
4 small or two big tomatoes chopped
3 tbsp. oil
1 tsp. jeera
pinch of turmeric powder
1 tbsp. red chili powder
1 tsp. clove powder
1 tsp. cinnamon powder
1 tsp. black pepper powder
salt to taste
Lime juice as per taste
Method:
Cook the rice in lot of water and drain out the water and keep it outside till its cold.
Heat a oil in pan. Add jeera in it. when its changes color, add onions and cook for five minutes then add tomatoes in it.
cook for two minutes and then with the help of back of spoon mash the tomatoes.
Add all powder masalas and salt and mix it.
Add rice and mix nicely so rice stays nice and long and don't get beat up.
When its ready , shut off the gas and sprinkle lime juice and serve hot with chole or pav bhaji, I had it with Chole.
