Remember few days back he made Spinach Ravioli with Grilled Vegetables Stuffing . Well dough was done but the stuffing was left. At that time I put it in fridge for later use, thought will make it dough again and use it in ravioli only. But one night was thinking to make pasta and I have a lot of basil in my pots so was thinking pesto too, so instead of chopping again vegetables , take it out that leftover grilled vegetables and add it in pesto along with pasta and diner was done in 10 minutes. It was used up in next five days but I am late posting this recipe.
On another note, I will be taking one course starting today till 17th October so will have very little time to visit and comments but I will try my best to visit all of you so just bear with me for 15 days.
Ingredients :
1/2 box Whole Wheat Penne Pasta
1 cup leftover grilled vegetable stuffing
1/2 cup Basil pesto
lots of black pepper powder or red chili flakes.
2 tbsp. EVOO
Method:
Boil the pasta as per box instructions. Keep it aside.
Make pesto and keep it aside.
Heat a pan, Add oil in it, when its hot, add pesto and grilled vegetables in it and mix it.
Add pasta and coat it with pesto mixture.
Let it cook for 2 minutes.
Take it out on plate, sprinkle some cheese, red chili flake and enjoy with garlic bread and wine or as it is.
