Sweet Corn Cake - Mexican Style

Happy Cinco De Mayo. Its a celebrated in US and in parts of Mexico on May 5th. In Memory of "The Day of the Battle of Puebla". Puebla its one state of Mexico But here in US that day all supermarkets have special sale on Mexican grocery and restaurants , especially Mexican, have celebration from 1 to 5 May. This dish is from one of the famous Mexican food chain in US.

I don't know about outside US but here we have very nice Mexican food joints and some of them serve really good and a lot of food. By far Mexican food is favorite among Indians because they can relate to Indian spices and taste and they offer variety of Vegetarian options so When ever we see more Indians going to any restaurant , it has to be nice, affordable and tasty food. One of them is Chevy's Fresh Mex. You will have lot of food with nice sides like salad, guacamole, salsa, rice and beans and this famous Sweet corn cake. Having spicy food and when you bite in to this sweet corn cake, you will find some relief from spiciness because its sweet and grainy and amazing. Now after kids we try to go to places where they can enjoy so missing out on this kind of loud noisy places but we been there so many times we remembered the dishes and taste by heart so to create those flavors at home is very easy. I made this with my enchiladas and we enjoyed this, had it for diner and used leftover for next day lunch also. I made it in muffin so its easy to eat. Traditionally they serve with ice cream scoop , so you can make it as a cake too and serve it with ice cream scoop. You can enjoy this with ice cream too.

Sorry guys, here is the little explanation of MASA HARINA - Masa means flour in spanish, made from corn and its dried and powdered version called Harina, sometimes on label it's called MASECA.

Ingredients :

1/4 cup soften butter
1/3 cup masa harina ( I get it from my local grocery store )
1/4 cup corn meal
1/4 tsp. of salt
1/2 chopped Jalapenos (optional) I like that surprising spiciness in it
1/2 tsp. baking powder
3/4 cup cream of corn can ( I used the can so didn't added additional sugar but if you don't use this , add 1/3 cup sugar and use one and half cup frozen corns and water as needed)

Method:

Preheat oven to 350 F.

Combine everything in bowl and mix it till there is no lumps in it.
If you are using metal muffins dish or cake bowl, grease it.
Pour it in muffin dish till its 3/4 full.
Put it in the oven and bake it for 20-25 minutes or toothpick comes out clean.
I made from  this mixture 10 muffins. You can spread the whole mixture in baking dish and bake it as cake too.
when its done, take it out from oven , and leave it outside for 2 -3 minutes.
Take it out  and serve it along with your Mexican diner or have it as dessert with ice cream. I had it with my Enchiladas  ,  guacamole, side of salad.
