Today's dish brought you by My husband. I didn't make this one, I just chopped tomatoes , clean the basil leaves and that's it. He gave me the dish and wine. He is a great cook, what ever I learned, I learned it from him only. In summer we have lots of fruits and nice fresh vegetables, so during those days its hard to stay in front of gas and cook. This diner happened that way also. We were tired and on our way home we stop by at one amazing super market, I just went there to get basil and come back with $20 worth of other grocery. I am glad I did it because everything was on sale and awesome. So he said lets make caprese and bruschetta for diner, I said we can have only one thing so we agreed on Caprese Sandwich. You don't need any fancy ingredients, just fresh basil, fresh mozzarella cheese, yummy roma tomatoes, balsamic vinegar, some pine nuts and good whole wheat bread.
Ingredients:
Few fresh leaves of Basil
6-8 nice slices of WW bread ( we use only WW , but you can use French, focaccia or ciabatta )
4 Roma Tomatoes
2 tsp. Good old aged balsamic vinegar
few pine nuts
Good Extra Virgin Olive Oil (its up to you how less or more you have to use)
Method:
Sliced tomatoes and keep it on side.
Pick nice and big leaves of basil , wash it and keep it aside.
Take a bread slice, spread some olive oil on bread, if you wish you can rub garlic clove on it , just to give hint of garlic.
Place the tomatoes down on your bread, then fresh mozzarella cheese, then basil and drizzle balsamic vinegar on it.
In a mortar, take few pine nuts and basil leaves and olive oil, crushed it and apply that on side of bread.
Make a sandwich and enjoy with a glass of fine wine.
