Stir Fry Arbi Chips ( Taro root / Eddoe)

Enough of unhealthy potato chips from fast food chains. We have so good other root vegetables we can use instead of potatoes, Arbi (Taro Root) is one of it. I like to make it dry or with gravy same way we make potatoes curry. But best of all is chips obviously with our Indian masalas in it. I got only two but make a bowl full of chips in no time and way healthier then potato chips.

 
Ingredients :

2 big Arbi

2 tsp of oil ( I use less oil in my cooking but you can use it as per your taste)
1tsp carom seeds(ajwain)
1 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin coriander powder
salt to taste
lime juice to taste
hand full of chopped coriander leaves

Method:

Cut Arbi in long slices.
Heat a oil in pan.
Add carom seeds , when it changes it color , add slices arbi.
Mix it and cover the lid and cook it for 5-6 minutes. Stir in between.
Check if its about to be done.
Add all powder masala and salt.
Cook for 3 minutes.
Turn off the gas add lime juice and coriander leaves.
Serve hot as it is or as a side dish with your lunch / diner.
Instead of lime juice you can add chat masala also.

  3. Ah yest, besides potatoes, taro is another of my fav. I like how you used the roots for a simple yet inviting dish with spices and the uplifting fragrance of coriander leaves.

  4. I might not get fresh arbi!!! But thought of bringing frozen pack at home many a times... Will get it when I visit Indian store next time :P 'M surely goin to make this one...

  9. My MIL makes them in almost similar way!! And i was hooked to them first time i had them!! And good thing is that we don't have to deep fry them!! Lovely :)
