Methi Vegetable Malai / Fenugreek leaves Vegetables in cramy sauce

First of all this original dish, I didn't like it for its look, everything is green, I know I am not a nice picture person, but all green in white sauce, was not appealing me, since then I was trying different ingredients in this dish, once I made it with paneer, that was good, this time I go for mixed vegetables and it was really good too because it was balanced by leaves bitterness with carrot and corns sweetness. Since I don't add sugar in my food, it was perfect. I made this healthy way , didn't wanted to use cashew paste but if you like you can use it instead of tomato paste. check out my original Methi Matar Malai. Its same recipe instead of matar I added vegetables and instead of evaporated milk , I added fresh cream.

Ingredients :

2 bunch of methi (clean and wash and chopped yield about 3 cups)
1 onion
2 big spoon tomato puree
1 cup frozen mixed vegetables (thawed which is carrot, peas, corn, spring beans with its beans)
3 tbsp. fresh cream
salt to taste
4 tsp.   oil
2 tsp.. ginger  paste
1 tsp. jeera
pinch of hing
1 tsp. coriander powder
1 tsp. garam masala
2 tsp. chili powder
1 juice of lime

Method:

Cut and wash leaves. Add lime juice over leaves , mix it and keep aside for 15 minutes.
Heat oil in a non stick pan.
Add hing and jeera. When started to pop add onion in it.
Cook for 3 minutes.
Add tomatoes, ginger , garlic paste and cook for 5 minutes.
Squeeze water from methi leaves and add it to the pan.
Add coriander powder, red chili powder, mixed vegetables and cover and cook for 4-5 minutes. make sure it does not stick to the bottom.
Add garam masala, salt, mix well and bring it to boil.
You can decide how much creamy you want. So depend upon that you can add cream. I added big 3 tbsp. of it.
Let it cook for 2 minutes since its nice and mix.
Serve hot with rice or parathas.

  15. Seriously I don't really care about pictures because sharing recipes is about taste which people look forward to. Methi is one of those that I can't find here. Yet I love the combo of greens and the flavors.

  18. I don't think the pictures are bad it is all about health and taste like Navas comment.When you think the dish does not look pretty try serving with a potion of white rice on a plate.Or use a plain white background and white bowl sometimes simple changes make drastic difference.
