Every week I make Mexican dishes. Now I have tried almost everything so whatever I am making I have to play with same ingredients but different way to create some interest in those dishes, otherwise life would be so dull. Mexican dishes are full of colors so while I was making my Enchiladas stuffing, thought today I am not going to make same old sauce, let me try new one. As you all by now, we are health freak and I preach that too. So staying in my healthy way , wanted to create some new sauce, I had all my ingredients out to make sauce, tomato sauce, chipotle sauce for my stuffing, garlic, jalapenos, so thought why not to mix chipotle in tomato sauce and give some creaminess with sour cream. Voila, had this delicious sauce ready. You can use it for all your Mexican dishes where it needed and even you can have pasta in that too.
If you don't have sour cream, use cream cheese too. Both works fantastic.
Ingredients:
1 8 oz. can tomato sauce
2 small Chipotle Peppers in Adobo sauce
2-3 tbsp. sour cream/ greek yogurt / cream cheese
2 garlic cloves finely chopped
1/2 Jalapenos finely chopped
1 green onion finely chopped
1 tsp oil
salt to taste
Method:
Heat a oil in pan. Add garlic and jalapenos in it and cook till its fragrant the oil.
Add green onions along with tomato sauce and chipotle sauce.
Add water and salt and cook on low to medium flame , till you get nice consistency.
When its about to done, add sour cream / greek yogurt and mix it nicely.
I use it for my enchiladas but you can use it for any kind a sauce dish, even pasta or any Mexican dishes.
