You make chicken, paneer, fish tikka masala but did you try making this eggplant tikka masala? I never tried before but since I saw it at Reva's page Easy Yummy Cookery, I was eager to try that. So when I get a chance to make it , I made it and loved it. It has all those yummy flavors of tikka dish but very healthy with eggplant in it. Check out her space too, she has an awesome other dishes too.
Ingredients for Marinade :
2 long purple eggplants , cut in big cubes
3 tbsp thick curd
2 cloves chopped garlic
1 tsp. cumin -coriander powder
1 tsp. red chili powder
pinch of cinnamon powder
pinch of clove powder
1 tsp. garam masala
salt to taste
If you have ready made tikka masala powder , you can use that too.
Ingredients for Gravy:
4 tbsp. oil /butter/ ghee ( I prefer oil only)
1 tsp. Jeera / cumin seeds
1 onion chopped
1 tomato chopped
2 tbsp. tomato puree
salt to taste
1 tbsp. ginger, chili, garlic paste
1 tsp. cumin coriander powder
1 tsp. garam masala
1 tsp. red chili powder
chopped fresh coriander leaves for garnish
Method:
Cut big chunks of eggplant and keep it in water.
In a bowl, mix all the ingredients under marinade and add those eggplants in it.
Marinade for good 2 hours.
Heat a 2 tbsp oil in pan, add those marinated eggplant pieces and cook till all marinade evaporate and eggplant get cooked. keep it aside.
For gravy, Heat a pan and add 2 tbsp. oil , when its hot, add cumin seeds, let it brown and then add onion. cook till its nice and little brown. Add Ginger , garlic , chili paste along with tomato and puree both.
Cook till tomatoes softened.
Add enough water to make thick gravy along with powder masala and salt.
cook till oil leaves the side.
Add cooked eggplant and let it cook in that sauce for 3-5 minutes.
Serve hot with roti, rice , puris.
