I just love stuffed vegetables and eggplants, anyway. So when ever I have chance to make stuff dishes and with that too eggplants I grab it. This is my mom's recipe and her dish , we used to have this with just plain khichdi and it taste awesome. You can have it with roti too but best way to eat with your hands and rice dish. Its easy and quick too so whenever you have eggplants and what to make, make this one and I am sure you all will be love it. You can adjust spices as per your family's taste , I love spicy so I add more spice but its totally versatile in spices, and this way you can stuff Bhindi, parwal, tinda, even small onions too.
Ingredients :
5 Baby purple Eggplants
1 small onion finely chopped
1 medium size potato
2 tbsp. ginger, garlic and chili paste
1 tbsp. turmeric powder
1 tbsp. red chili powder
1 tbsp. cumin - coriander powder
1 tbsp. garam masala powder
salt to taste
3 tbsp. oil
fresh chopped coriander leaves to garnish
Method:
Cut eggplants in half first, then make X mark to stuff the stuffing. Put it in salted water till you make the stuffing.
Mix in onion, all powdered masala, ginger , chili , paste, salt and mix it.
Now take the eggplant and stuff the mixture in it.
Heat a nonstick pan, add oil in it.
Add those stuff eggplants and circle slices of potatoes.
cover and cook till the eggplants and potato cooked nicely.
Serve hot with sprinkle coriander leaves on it.
This dish goes perfectly with just plain khichdi.
