I just love pulav and biryanis, so try to make that whenever I can. This is just simple vegetable pulav. Nothing exotic flavors or ingredients goes in it, just rice, mixed vegetables and whole spices and done, have it with raita or dal or kachumber and dinner is done. This is a perfect side dish for any punjabi gravy dish or even you can make this with pav bhaji instead of making tava pulav. Or even make it alone and nothing else has to be needed. Its totally upto you how and when to make it.
Ingredients :
2 cups cooked basmati rice
1 cup mixed vegetables (carrot, peas, spring beans, corn or your choice of vegetables)
1 small onion chopped
1 tbsp. ginger garlic paste
Salt to taste
2 tbsp. oil
whole Spices - cloves, black pepper, cinnamon stick, bay leaf, star anise
Few pieces of cashews
1 tsp. Turmeric powder
Fresh lime juice and chopped coriander leaves
Method:
Wash and cook rice in plenty of water and strain it and cool it and keep it aside.
In a pan, add oil, add whole spices and let the oil become fragrant.
Add onion and cook till its little pink.
Add ginger garlic paste along with vegetables and cook till everything is cooked.
Add salt and turmeric powder and then add cooked rice and mixed it nicely. Add cashews in it.
Add lime juice and sprinkled coriander leaves and serve hot with raita or dal or kachumber.
I had it with cabbage , carrot kachumber.
Instead of pre cooked rice, you can cook rice along with vegetables too.
