Ringna no Olo / Baigan Bhartha (Gujarati Style) / Smash Eggplant

After blogging, I learned that every region has their style of bhartha dish. Some smoked, some pressure cook it. I like Punjabi and Gujarati style both. Still have to try others. This is very simple Gujarati style of making bhaigan Bhartha. It doesn't require any cream or any fancy ingredients , just some masala from your masala dabba and basic ingredients and tasty delicious bhartha is ready. You can cook eggplant directly on gas, apply oil on it and cook it in microwave or oven or what I like is , take out the skin , cut it in big chunks, add few garlic cloves and oil and cook it in microwave for 10 minutes and no messy clean up after wards.

Ingredients :

1 big purple eggplant
2-3 spring onions (if not white / red onions are fine)
3 cloves of garlic (green garlic is so much better, but if not, then white is fine too)
2 chopped tomatoes
2 tsp oil
1 tsp jeera (cumin seeds)
pinch of hing
1 tsp turmeric powder
1 tsp red chili powder
salt and lime juice to taste
1 tsp freshly crushed ginger and green chili
1 tsp garam masala
handful of fresh chopped coriander leaves


Take out the skin of eggplant and cut it in big chunks and put it in microwave safe bowl with garlic and 1 tsp of oil.
Cook it for 10 minutes and let it cook for some time then mashed it with potato masher.
Heat a pan , add oil in it. Add jeera and cook till it changes its color.
Then add hing, turmeric powder, red chili powder, spring onion and cook for few minutes.
Then add tomatoes, mashed eggplant, salt, crushed ginger and green chilies, garam masala and cook for 10 minutes on medium flame.
When there is no water inside, shut the gas off and add lime juice and coriander leaves.
Serve hot with chapatti or fulka or traditional way to eat with bajra rotla and some buttermilk on the side.
