Last week we had a severe heat wave, Temperature was 100 F, feels like 107. That time no one wants to be near gas and cooking. Here we have central AC so its not that bad but your body dont want any heavy food so what do you do ? You can make salad and eat it but not just greens, hearty salad which can fill your stomach and satisfied too. So I made red potato and avocado salad with avocado and cilantro dressing, which I just love it and I keep enough in my fridge so I can use it when ever I feel like it. It goes with everything, I am now just drizzling on everything.
Ingredients :
4 Red potatoes
1 Avocado
Salt and Pepper as needed
Lime juice
For Dressing
1 Avocado
1/2 cup Coriander leaves with stems if stems are delicate
1 Jalapenos - seeded if you like spicy or discard the seeds if do not too spicy
Salt and pepper as per taste
1 Lime
Method
Boil the water to cook the potatoes.
Mix the ingredients of dressing in blender and keep it aside.
Wash nicely potatoes and cut it in cubes.
Boil for 7 minutes without disturbing, after that check for if its cooked but not over cooked.
Take it out in colander.
Cut the avocado in cubes too.
Mix potato and avocado in bowl, add salt , pepper, lime juice.
Pour the dressing as needed on potato salad and mix it and enjoy it as a side dish for your BBQ , or as a salad.
