Punjabi Chole Masala

This is everyone's favorite dish I guess and still everyone makes differently and taste different too. But its so tasty when make it right and full of protein for vegetarian diet. It goes very well with bhature, a fry bread but personally we like it with naan or paratha. You can serve it with your choice of bread.


Ingredients :

3 cup Kabuli chana (chickpeas / Garbanzo beans) soaked over night
1 big onion chopped finely
2 big spoonful of tomato puree
2 tbsp. chole masala
1 tbsp. red chili powder
1 tsp turmeric powder
2 bay leafs
1 tsp Jeera
few black peppercorns
2 dry red chilies
salt to taste
pinch of kasoori methi
1 tbsp. freshly made ginger, garlic paste

To Garnish
Fresh coriander leaves
sliced onions
lime wedges

Method:

Drain the water out of soaked chick peas and wash them again under water and pressure cook it with enough water and  one tea bag in it.
Cook it till it 's tender. Don't drain that water, you can use it to make the gravy for chana.

Heat a big pan.

Add oil in it. Add Bay leafs, dry red chilies, black pepper corns. When its crackle, add jeera in it.
when its changes the color, add onion in it and cook till its pink.
Add tomato puree along with chole masala and cook it till nice aroma comes.
Add ginger, garlic paste, red chili powder, turmeric powder and mix it. Cook it for a minute.
Then add boiled chana along with water and add salt and mix it and let them become friends with each other till its dry or if you like little gravy, cook it till then.
Add kasori methi and mix it.

At the time of serving take it out in serving bowl add coriander leaves, arranged sliced onions on top and lime wedges on side and have it with warm naan or bhature or puris or rice.

  3. This is definitely a favourite of mine :) I love the sound of your version; I like to make mine with kala chana to make it super nutritious, and sometimes with a bit of tamarind also. My best breakfast memories ever are having this in a leaf bowl in India!
