I had no clue what is Maddur vada until I saw my fellow bloggers posted these yummy vadas/ crackers. Everyone made it so nicely , I was very tempted to make it. But it was fried dish and I am not that much in to frying stuff in my house. So I was making this in baked version, I failed at first attempt, but did not loose my heart , if you want to eat healthy you have to try it. Next time I was successed, so sharing it most famous Maddur vada , Baked version. Hope you all like it and let me know if I make it right or not. All suggestions are welcome. I was trying so I did not took step by step pictures , next time surely take it and add it here.
Ingredients :
1/2 cup Semolina / Rava
1/2 cup Rice flour
1/2 cup All purpose flour
1/2 cup finely chopped onion
2 tbsp. coriander leaves finely chopped
2 tbsp. green chilies finely chopped
pinch of Asafetida / hing
Salt to taste
1 tsp. black pepper powder
few dry curry leaves , mashed
pinch of Cardamom powder
1/4 cup warm water
1/4 tsp. Baking soda
4 tbsp. oil to knead the dough
Method:
Add 1 tsp. oil in pan , add onion, Hing, salt and cook till its transparent. Let it cool.
In a big bowl, add rice flour, AP flour, Semolina, baking soda, green chilies, coriander leaves and mix well.
Add cool onion mixture along with black pepper powder, curry leaves and cardamom powder.
Add warm water little by little to make a dough. Knead dough nicely for 2-3 minutes and cover with a lid and put it away for 20-30 minutes.
Preheat the oven at 350 F.
Take lemon size ball dough and flatten the dough and make medium size circle.
Arrange the rolled puris / discs in baking dish and bake them for 25-30 minutes or until its nice and crisp.
If you want you can deep fry in hot oil too. Both way taste very good and perfect for munching or evening snack with cup of tea or coffee.
