Nutella Coffee Frappe

My love for Nutella continues. Who loves Hazelnut coffee? now you can get same taste with Nutella in it. To give a chocolate taste I add 1 tsp unsweetened cocoa powder and made it with skim milk. To top it up I use Redi whip fat free whip cream and drizzled with more hazelnut spread.

Ingredients
1 1/2 cups coffee
1/4 cup skim milk
3 tsp Nutella  spread
1 tsp unsweetened cocoa powder
sugar to taste
Whip cream to top it




Make your coffee the way you like it, chill it in freeze for 4 hours or overnight. Or for faster add 5 ice cubes and make it cold.
Put all the ingredients in blender except whip cream and mix it. Blend it until combined.

Top it with Whip cream and drizzle with Nutella if you desire.

Home Made Khoya (Mawa)

Khoya is a milk cheese, made either from milk powder or traditionally by reducing whole milk in an open skillet for long hours. It is one of the most famous and a classic ingredient in Indian cooking where it is used both for savory as well as sweet dishes. But more often than not, you will see a plethora of age old traditional sweets calling for this ingredient. You can find Khoya in India very easily but out of India it is very hard to find and if it is there then it's very expensive , laying in the freezer god knows how old it is. so I decided to try to make it at home. With doubt in my mind that I will finish it off or not, I did it. I used half gallon of milk and I was done in 60 minutes so not bad deal and above all its fresh and easy to make it. Once you try it trust me you will never go back to buy it ready made  With khoya possibilities are endless, you can add it in barfi, peda, gujias, halwa or any savory dish which requires khoya. 

Ingredient

half gallon of milk

Steps :

Using Using a non stick pan helps a lot to avoid the milk from getting burnt. Even a little burn can spoil the entire milk.
Brig the milk to boil in non stick pan.

Stir continuously so it doesn't stick at the bottom.
stir until milk completely thickens to form mava and there is no water inside.

With half gallon of milk, I get desired result in 60 minutes and at the end I got 2 cups of fresh mawa.

Lasuni Methi Palak Paneer (garlicky fenugreek spinach and cottage cheese)

Yes two greens in one dish. I cooked greens once a week, just because its good for us and yes I love it too. I remembered when I was younger and was in India, my parents get whole bunch of different greens and we used to sit and take one greens( bhaji) and clean it. I always pick palak cause it was easy. But now a days I have to do everything , no choice.

It's very east and quick dish , once you have everything ready. So lets move on.

Ingredients:

1 bunch of Spinach
1 bunch of Methi
10-12 pieces of Paneer (fry it and put it aside)
1 onion chopped
one whole bulb of garlic - finely chopped
1 tbsp of turmeric powder, red chili powder, dhania powder, jeera powder
2 tomatoes purees
1 tbsp ginger paste,
1 tbsp ginger paste
1 tbsp green chili paste
salt to taste
4 big spoon of oil (you need more oil in general for greens)

Method:
Clean and wash up spinach and methi.  you dont need to puree them but finely chopped them.
Chopped finely all garlic.
Heat a non stick pan, add oil in it.
when it's hot add onion and cook till it's translucent.
add garlic and cook it till it's slightly change color.
Add all the powder masala, tomato puree and all 3 pastes.
Mix it well till oil comes on top.
Now add spinach and Methi and mix it with masala.
cook it till all the water from bhaji is gone then add  salt and paneer and cook it till it's dry.


Serve it hot with roti or naan.

Nutella and Coke Brownies

 
Yes you are reading right. Brownies made with can of coke and Nutella. 3 favorite things in dish. Who can resist? Not me. My kids love brownies year around but I don't have eggs all year around in my house so when I come across this recipe I was so happy that as soon as I finished reading it I start making it. I thought it's impossible recipe but hey, I tried everything once. so ....

I box Brownie Mix
1 (12 oz) coke
3/4 cup Nutella


Preheat oven to 350 degrees.
In a Large bowl, add package mix. Open that can of coke (without drinking it) and slowly pour over brownie mix. It will foam up a lot.


When all the coke has been stirred in and well incorporated the batter will be very liquid. don't worry, add 3/4 cup Nutella and mix it again.
Pour in the 9/13 pan which has been lightly coated with non stick spray.
Bake for 30 - 35 minutes or as directed on box. Mine took full 40 minutes in order to have a toothpick inserted in the center come out clean.

Let cool them and cut it as small or as big pieces you want.

Thai Spicy Noodles with Thai Basil and Peanuts

We all love to eat spicy food so Korean, Thai, Mexican are our all time favorite. Like that Thai food is one of my favorite cuisine too. I love to eat and make Thai dishes at home. This one is very easy and quick to make it.

Just make sure if you are buying Basil for Thai dish it has to be Thai Basil. Italian Basil is not good for this dish. Both Basil are different in shape and taste and used in totally different cuisine. Ok so lets cooking.

Ingredients:
half box angel hair spaghetti / rice noodles (i used whole wheat spaghetti)
Oil 2 tbsp
10 -12 long sliced ginger
2-3 Thai chilies ( I like spicy so take 3, you can adjust as per your taste)
6-7 florets of broccoli
1 block of Extra Firm tofu (long sliced and shallow fry in oil until it become crispy)
1 carrot - match stick slices
1/4 cup thinly sliced cabbage
1 onion- match stick slices
1 green capsicum - match stick slices
10-12 leaves of Thai basil
2 tbsp peanut butter
1 tsp soya sauce
1/2 tsp vinegar
1/3 tsp sugar
2 tsp hot chili sauce like sriracha
hand full of sprouts for decoration

Method :
Mix in one cup Peanut butter, soya sauce, vinegar, sugar, hot sauce and keep it aside.
Boil the noodles as per box and keep it aside.
Heat 1 tsp oil in non stick wok. Make sure oil is hot, add chilies, ginger. Let them cook for 30 seconds  until aroma comes.
Add all the vegetable, quickly saute them and add the liquid sauce mix.
Mix it with veges and add noodles in it. Add Thai basil in it.
Again mix everything and taste it and season as per your taste.
In a serving bowl take everything and top it with Thai basil, peanuts, sprouts.

Seasoned coriander leaves pancakes (Kkaenip Jang Ddeok in Korean)

“Jang” is a kind of seasoning, like soy sauce (Gan jang in Korean), soy bean paste (Doen jang in Korean), or chilli paste (Gochu jang in Korean). Therefore “Jang Ddeok” means pancakes seasoned with some kind of sauce that I mentioned above. Its name can change depending on what kind of sauce, vegetable and meat you add in it. 

Since I am adding coriander leaves, I will name this coriander leaves pankcakes.

Ingredients : 
1 small chopped onion
1 small green  thai chili chopped
1 tbsp chopped ginger
3 tbsp chopped coriander
half grated carrot
1 cup AP flour
salt to taste
1 tsp chili paste
water to make the batter

Method : 
Cut everything and mix it with flour and make a batter. Add Chili paste and salt in it.

 

  1. Pre heat the pan.
  2. Put some oil in (about 1 tbsp).
  3. Scoop out (one spoonful at a time) the mixed pancake, with a spoon, on to the pan.
  4. Turn them over when the bottom part cooks.
  5. When both sides cook, serve them on the plate.
  6.  serve them with a small bowl of soy sauce (mix with one dash of vinegar) for dipping.

Thinly Sliced Radish Kim chi

I love Korean food. If you have ingredients at home or you have nearby Chinese supermarket you are in heaven, that's what I have. So whenever I go to Chinese supermarket I saw my favorite Kim chi but it has anchovy sauce in it. So I always backed out. Now I got this easy and without anchovy sauce Kim chi recipe which I would like to share it with you.

One medium white radish (shredded)
salt - 1 tsp
chili powder - 1 and half tbsp
minced garlic - 1tbsp
sugar - 1 tbsp

Peel and thin slice radish. Put the sliced radish in big bowl and all the rest of the ingredients.
Mix all the ingredients with spoon (mixing by hand then wear gloves otherwise the sauce can sting your skin.)
Serve it on the plate. (I like to eat it next day cause it taste good once its fermented)
