Grilled 7 layer Burrito

In my house, we prefer Mexican food over Italian. Because first of all you can make it spicy and it is less heavy then Italian food. You can control the cheese portion. That's why once a week is a Mexican fiesta in my house at dinner time. This week I make two dishes for one night because it has the same ingredients and same prep work but you can enjoy both dishes. For same stuffing, I made burrito and Taco too. Only in Taco, you don't have to put rice in it. 7 layer means it contains seven things inside. First Mexican rice, beans, lettuce,  tomato, guacamole, sour cream, Cheese  In Taco Bell they don't put onion but I like the crunch in it so I always added that.

Ingredients:
For Refried Beans:

1 can refried beans
1 tsp taco seasoning
2 cloves chopped garlic
1 seedless Jalapeno chopped
few drops of Tabasco
1 tsp oil

Method:
In a Small pan, add oil.
Add garlic and jalapenos and saute till u get a nice aroma, for a minute or so.
Add refried beans, seasoning and little water to lose the mixture.
Stir it nicely and cover it and cook for 5 minutes on slow flame.

Once done, add Tabasco and stir it and keep it aside.


Ingredients for Mexican Rice:
2 cups cooked rice( I use brown rice but you can white)
1 onion chopped
2 cloves garlic chopped
1 seedless jalapeno chopped
1 small capsicum chopped
1 carrot chopped
1 tsp taco seasoning
salt to taste
few strings of cilantro chopped
1 tsp oil

Method:
In a medium pan, heat oil.
Add garlic and jalapenos and cook for a minute.
Add vegetables and cook for 2 minutes.
Add rice, seasoning, salt and mix it and cook for 2-3 minutes.
When done add cilantro and keep it aside.

Ingredients for Burritos:
4 Whole wheat burrito style tortillas
1/4 cup cheddar cheese
1 red onion chopped
1 red tomato chopped
few lettuces leaves chopped
Guacamole
Sour cream
Tabasco sauce as per your need

Assemble : 
Take one tortilla, spread bean mixture first, then rice, then onion, tomato, lettuce, guacamole, cheese, sour cream and fold it. You can eat it as it is or heat at griddle and grilled on both sides and serve it.

Seven layer burrito

Same way you can make Taco too. But in that, you don't need to put rice. Just Beans, onion, tomato, sour cream, lettuce, guacamole, cheese.

Taco
Enjoy Mexican Fiesta at your dining table. Serve it with some soda or beer or margarita. Anything you prefer.
