Hyderabadi Vegetable Biryani with soya

I love biryani and my mom makes wonderful biryani so as my sister. In my house my husband not in to white rice so when ever I get chance I make this just for me. So one day he has to go somewhere for diner and I was by myself, well first thing come across my mind is biryani. so I make it. How? easy , i share it with you.

Ingredients:
4 cups cooked Basmati  rice (3/4 cooked)
1 onion
10 big pieces of cauliflowers florets
1 big potato (in cubes)
1/4 cup pigeon peas
1 cup soaked and drained soya chunks
each of whole garam masala ( bay leaf, star anise, big and small eliachi, few black peppercorns, few cloves)
salt to taste
2 tbsp each grated ginger, garlic
2 chopped green chilies
few strings of mint leaves
3 tsp Ghee
1 tbsp turmeric powder
1 tbsp red chili powder

Method:
cook rice in lot of water and salt till it's 3/4 done.
Drain it and keep it aside.

In a big pot, add ghee and when it hot, add whole spices, when you get nice aroma, add chopped onion.
Cook till it changes it color and then add ginger and garlic and chilies along with powder masala.
mix with rice
Add vegetables and soya.
Add cup of water and mix it and add salt to it. cover it and let it cooked till all veges cooked.
add rice and haldi water
Add mint leaves and then Rice on it.
Mix haldi powder in water and spread it on top.
Carefully mix it little and put a lid on it and tight cover it and put it on dum.
After 5 minutes it should be done.
Serve it with Raita or dal or dahi chutney. I prefer spicy dal with it.
Ready to dig in.
