Triple Chocolate Chunk Cookies

We always have chocolate chips in pantry and my kids love those in cookies but I wanted to make bite size chunks chocolate and add them in cookie mixture and have it. Fortunately I had those big bars of chocolate on hands so I used it, otherwise you can use chips too. This are perfect with cold cup / glass of milk for after school snack or anytime snack. If your kids are like mine, this wont last more than 3 days in cookie jar. I am always on look out for cookie recipes because in my house cookie and ketchup both goes very fast.

Ingredients :

1 stick unsalted butter / 1/2 cup
1/2 cup white sugar
1/4 cup packed light brown sugar
1 large egg
1/2 tsp. vanilla extract
1 and half cups AP flour
1/2 tsp. salt
1/2 tsp. baking soda
1/3 cup bitter sweet chocolate chunks
1/3 cup dark chocolate chunks
1/3 cup semi sweet chocolate chunks (you can change as per your taste and use chocolate chips too)

Method:
Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with a silicon mat or parchment paper.
Mash the butter, white sugar, and brown sugar together in a large mixing bowl with a spatula until creamy and smooth, 2 to 3 minutes. Add the egg and vanilla; whisk vigorously for 20 to 30 seconds.

Whisk the flour, salt, and baking soda together in a small bowl; dump into the butter mixture and mix until just combined. Fold the all three chocolate chunks into the mixture. Arrange onto the prepared baking sheet using a small scoop or large spoon. I use one tablespoon measurement for all my cookies.
Bake in the preheated oven until golden brown, about 10 minutes; remove from oven and allow to cool on the sheet for 10 minutes. Transfer to a wire rack to finish cooling completely.

Serve at room temperature with glass of milk.

Cardamom Flavor Eggless Banana Marble Bread

I love cardamom in any form, to start the day with, I love it in my tea. Then in cooking also while making rice or some curry for koftas I always add whole or crushed cardamom in it. Even if I am not cooking I am always chewing cardamom , its better than any mouth fresher ,  So I had two bananas sitting on my counter top, I was hoping after two days that kids wont eat that so I can make banana bread. You guys love my previous post on WW eggless banana bread  and Eggless banana and oats bread. So I was confident that,  me as well as all of you also will love this delicate flavor simple breakfast bread. I wanted to play with the bread too so I take out one cup of batter and put a cocoa powder in it and give a marble effect. After all,  I have good baker bloggers friends , I have to learn something from them. Right? So the effect and the taste is out of this world. Oh one more thing, I am allergic to walnuts so I put cashews in it but you can go with walnuts too.

Ingredients :

1 and half cups Whole Wheat flour (you can use AP flour too)
1/4 tsp. baking powder
1/4 tsp. Baking soda
pinch of salt
1 tbsp. cinnamon powder
3 tsp. cardamom powder ( I added 4 because of my love to cardamom)
1/4 cup broken cashews
1/2 cup sugar (since its bread , u don't need too much sweet, but if you like sweet, add more)
2 tbsp. oil
1/2 cup milk
2 ripe bananas
2 tbsp. unsweetened cocoa powder

Method:

Preheat the oven at 400 F. Grease your baking pan with oil in it and keep it aside.
Mix all dry ingredients in bowl. from Flour, baking powder, soda, salt, cardamom powder, cashews, leave some cashews out to top it off and sugar.

In a mixture, add peeled bananas, oil, milk and make a fine puree.
Now add this wet mixture in dry mixture and mix thoroughly.
Pour it in bread pan and reserve one cup of mixture.

Add cocoa powder in that mixture and mix it.
Then add this cocoa mixture in rest of the mixture and with butter knife , give swirl effect.


Top it off with rest of the cashews.
Put it in the oven and bake it till toothpick comes out clean around 30-40 minutes. check in between.
After its baked, take it out from the oven and leave it on counter top till its cold.
Remove it from the mold and cut it as per your choice, thick or thin slice. As per my suggestion, thick slices are better.


 See the marble effect inside. Its awesome. Warm it when you needed, apply little butter or jam and have it as your breakfast or light snack too.

Sweet Corn Soup with Vegetables and Tofu

I used to make sweet corn soup only with tofu but it was not filling soup. I never made it only soup because I always had it with main dish like fried rice and any Chinese dish. But this time I decided to add vegetables in it to make it more crunchy and filling and believe me it was so good. Generally after having Chinese or Thai food for diner , we have to have some dessert because in hour or two we feel like having dessert because while eating diner we feel full but it digest too fast and we feel hungry again. but with this soup that was not the case. This soup goes very well with quesadillas or wraps or any sandwiches, as a soup and sandwich combo.

Ingredients:

1 can cream style sweet corn
few florets of broccoli
half block of firm tofu , cut in cubes
7-8 spring beans cut in small pieces
1 carrot chopped
2-3 green garlic chopped
1 thinly slice thai chili
few slices of ginger
2 tsp. soya sauce
2 tsp. or as per your taste sriracha sauce
few green onions chopped for garnish
pinch of white pepper powder
pinch of black pepper powder
1 tsp. of oil

Method:

Heat a pan, add oil in it. when its hot, add green garlic and ginger, chili. Cook for minute then add all the vegetables and cook for minute.
Add can of sweet corn and add water in empty can and then pour that in soup.
add soya sauce , sriracha, both pepper powder and mix it.
Add tofu in it and cook till it boil.
Serve it hot in a bowl , garnish with green onions.
You can have it with your main course of Chinese diner or with sandwich or wraps or just like that.

Uttapam balls in Garlic Pepper Rasam

Me and my hubby generally don't eat fresh lunch, what ever left over is there we use it for lunch. But one day , he worked very hard physically and I knew that he will be hungry so I asked him if he can eat paniyaram and rasam, he said anything will work. I was not in a mood to make dosa stuffing and stuffed them in paniyaram just like this. So I made using uttapam mixture and made this yummy healthy balls, put them in hot and steamy garlic rasam and warm the body with this healthy lunch. You can use any vegetable for stuffing.

Ingredients :

1 finely chopped onion
1 finely chopped tomato
1 thai green chili chopped
4 green garlic chopped finely
big slice of ginger chopped
lot of coriander leaves chopped
3 cups of uttapam batter
salt to taste only for vegetables if your batter had salt in it, otherwise  as per taste
Garlic Black Pepper Rasam

Method:

Mix all chopped vegetables in batter.
Heat a paniyaram pan , add tsp. of oil in each holes.
Pour big tablespoon of batter in each holes.
And cook them till it leaves side and then turn it over so it cooked from other side too.
Made all till you done with batter.
Keep it aside.
Make rasam on other stove.
To serve : take a big bowl, pour rasam in it, and add 2-3 balls in it and enjoy.

Eggless Tutti Frutti And Chocolate chip Cake

First of all thank you all who made this cake during the month of December, which inspired me to bake this awesome cake , But every one made it with only tutti fruitti so I wanted to do something different and what is good in cake than chocolate chips so I added that and cut back on sugar and yes made it with whole wheat too. I made it twice , first time regular cake and recipe , it became too sweet for me, so second time I cut back sugar and added chips in it so it was perfect for after diner , dessert with whipped cream on top. It was cold when I made it so ice cream was out of question, otherwise it goes very well with ice cream. Just warm up little slice of cake in microwave and put a dollop of ice cream on top, you will love it.

Ingredients :

1 cup Whole wheat flour
1/2 cup AP flour
1/2 cup orange juice - I use Tropicana
1/4 cup sugar , you can add more if you like sweet
1/2 cup oil
1/3 cup tutti fruitti mixed with tbsp. of flour
1/3 cup of chocolate chips mixed with tbsp. of flour (you can mix both in same cup in tbsp. of flour too)
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla essence
pinch of salt
5 tbsp. non fat milk powder

Method:

Preheat the oven at 350 F.

Mix the dry ingredients in one bowl, both flours, sugar, baking powder and soda and salt, milk powder.
Mix wet ingredient in other bowl., Orange juice, oil, vanilla essence. mix it nicely.
Now add little by little dry ingredients in wet one and mix it.
Batter should be thick  not runny.

Grease the baking pan with oil and pour this batter in it.
Bake it for 30-35 minutes or until tooth pick comes out clean.
Allow to cool it outside in same pan for sometime before taking it out. When its cold, put it in wire rack.
when its completely cool, cut them in desired shape.
