Sometimes I am too lazy to make anything for lunch, just have a glass of juice or heat up some thing leftover in the fridge. But today I was no mood for either of it and I like to make something new and healthy for me and my hubby. So I came up with this idea becasue all the ingredients I had , just had to put it together. It's easy , healthy and now our favorite one too.
Ingredients:
1 can (15 oz.) of chickpeas or 1.5 cup cooked chickpeas
half chopped cucumber
3 whole wheat Tortilla
half chopped red onion
1/4 cup chopped red capcicum
1 clove of garlic
3-4 pickled cucumber
2 tsp chopped fresh dill
2 tsp pickled chilies
salt to taste
2 tsp chopped coriander
6-7 Almonds chopped
1 tbsp regular mustard
1 tsp wasabi paste
2 tbsp tahini
salt and pepper to taste
Method:
Chopped everything and and mix it with chickpeas.
Add wasabi , tahini and mustard and check for the seasoning. Mesh some of the chickpeas with forks.
take one tortilla and spread generous amount of stuffing in it.
Roll it and make it wrap.
Eat it immediately with a glass of juice and thank yourself for having nice healthy lunch.
