Bhinda nu Khatiyu | Okra in Yogurt Sauce

If  you have seen my Gavar nu Khatiyu / Cluster beans in yogurt sauce then you know, I just love Okra in a same way too, as I mentioned in that post. We used to have this back home. No one resist this shak and we always finish it up the plate and the pan both. Those days we never had any leftovers, mom just make perfect proportion food that we never had to eat leftover. She was a working mom and still we never had cold or leftovers for anytime. So about this dish, you can cook okra the way you cook with onions, then when its almost done, add yogurt and mix it nicely and turn off the gas. You don't need to cook after adding yogurt. Just enjoy it with hot rotis for dinner or lunch.

Ingredients :

1/2 lb. Okra - cut it in circles
1 onion chopped
1 tsp. of Methi seeds - Fenugreek seeds
1 tsp. Turmeric powder
1 tsp. cumin and coriander powder
1 tsp. Red chili powder
1 tsp. garam masala powder
1 tsp. Ginger garlic paste
salt to taste
2 tbsp. oil
3 tbsp. plain yogurt

Method:


Heat a pan.
Add oil in it.
Add methi seeds and when it become little brown, add onions in it
Cook onions till it become pink.
Add all the powder masala along with ginger garlic paste.
Mix it and then add okra  and salt and cook partially cover until its done.
When its almost done, add yogurt and mix it nicely.
Let the any extra water from yogurt evaporate and turn off the heat.
Enjoy hot sour and spicy okra with rice or rotis.
