In my house I make more Mexican dishes then any other cuisine. It's easy to prepare and very similar spices and spicy which I like most. This vegetarian lasagna is very easy to make, just assemble everything , put it in oven , wait for 15 minutes and diner is done. You can add your choice of vegetables and cheese and your family will thank you for this.
Let's make it. BTW all my recipes are for two adults, you can adjust ingredients for more servings.
Ingredients :
3 Whole wheat tortillas
2 cups Monterey jack cheese or cheddar cheese
1 cup Enchilada sauce (In tomato puree add taco seasoning and boil it for few minutes and put it aside)
Stuffing:
1 each onion, capsicum, carrot, zucchini (chopped)
1/4 cup frozen or fresh corn (if using frozen , thaw first)
1/4 cup soya granules
1/4 cup black beans
2 tsp. Taco Seasoning
2 tsp. chopped garlic
1 jalapenos chopped
1 tsp. oil
salt to taste
sour cream, guacamole for side
Method:
Let's make stuffing first.
In a pan add oil , add garlic and sauté for 30 seconds, then add jalapenos, cook for 30 seconds.
Add onion, carrot, corn, zucchini, capsicum, soya , black beans and mix it.
Add taco seasoning and salt and cook it for 5 minutes, you don't want to over cook veges, cause it will cook later on in the oven also.
Keep it aside.
Let's assemble Lasagna.
In a glass dish or baking dish, pour tomato sauce first.
Cut tortillas in half. Arrange tortillas in bottom of the dish overlapping them is necessary.
Spread half of the stuffing over tortillas and then sprinkle half of the cheese on it.Pour two spoonful of sauce on it.
Repeat layering process with remaining tortillas, stuffing, sauce and cheese.
Cover the dish with aluminium foil and bake for 15 minutes. Carefully remove the foil and serve warm.
Garnish with sour cream, guacamole and salsa.

Pinch of cayenne pepper
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon table salt
1/2 teaspoon black pepper
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch of cayenne pepper
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon table salt
1/2 teaspoon black pepper
DIRECTIONS:
Mix all spices together until well combined. Use immediately or store in an airtight container in your spice cabinet and use as needed.
