Taquito (ta-KEE-toe) means "little taco," and these are a delight for vegetarians. They're filled with savory ingredients and then rolled into cigar-shaped bundles. You can prepare and refrigerate the filling the night before; allow it to stand at room temperature for 30 minutes before assembling the taquitos. I had leftover stuffing from my chimichanga and I wanted to make this for so long so I use it to make Taquitos. You can use any filling and cheese and bake it in the oven and have it with your favorite salsa , guacomole or my cilantro jalapeno dip.
Ingrdients :
2 tsp oil
1/2 chopped onion
1/2 cup corn
1 chopped green capsicum
1 chopped red capsicum
1 chopped jalapenos (seedless)
3 cloves finely chopped garlic
1 tsp paprika
1 tsp taco seasoning
salt to taste
any hot suace if you prefere
1 cup montery jack cheese
6 corn tortillas
Method:
Heat a pan, add oil in it.
Add garlic and jalapenos in it. Cook for a minute or two.
Add all the vegetables in it.
Add Taco seasoning , paprika and salt and hot sauce
Mix it and cook for 3-4 mintues.
Take it out from flame and let it cook.
When stuffing is cold, take one tortilla , heat up on low flame to make soft
Take a spoonful of stuffing put it in middle and then top it with cheese.
Fold it like cigar and bake it in preheat 350 oven at 10-15 minutes until cheese is melted and tortilla is crunchy. You can shallow or deep fry it too.
Serve it hot with your choice of dip,salsa, guacomole or my cilantro dip.
