As you know I am not a big fan of paneer. In the beginning years of my marriage I had so much paneer that I am fed up with that. But still now and then I make it This time I wanted to make tikka masala but me or my huby both can't eat paneer alone so I have added few other vegetables , it is totally optional , you can make it with paneer only or add your choice of vegetables too. Adding vegetables its good for taste and health too and economic too. If you are making this for diner party with only paneer you have to use lot of it and its costly. Where adding vegetables dish looks colorful and its healthy and gives crunch too.
Ingredients :
half block of paneer
1 green capsicum
half red capsicum
1 carrot
1 onion
For the sauce :
Ingredients :

Canned tomato puree- 1 and half cups
Crushed Ginger-2 tsp
Crushed Garlic-2 tsp
Ground Cumin-1 tsp
Ground Coriander-1 tsp
Garam Masala-1 tsp
Turmeric-1/2 tsp
Sugar-1 tbsp
Water-1/2 cup
Light Cream-1/3 cup
Kasoori methi (dried fenugreek)-1 tbsp
Butter-1 tbsp
Oil-1 tbsp
Salt-to taste
Method:
Heat a grill pan and grill all the vegetables except onion.
Then chopped it in big/small cubes as per your liking.
In a pan heat the butter and oil and add the ginger and garlic.
Saute for 1-2 minutes until the raw smell disappears.
Add the tomato puree and all the spices, salt and sugar.
Cook on medium for about 4-5 minutes.
Add the water and continue to cook for about a minute.
Add the cream and kasoori methi. Check the seasonings.
Add the paneer , vegetables and onion into the sauce and simmer for about 5-6 minutes until well incorporated. Vegetables are already cooked so you don't need to overcook them.
Enjoy with Naan or Rice!

ReplyDeleteYou know I am a paneer lover too.. but the fiance hates it.. so much so that the one time that we ate together and I ordered a panner dish he actually ate everything except paneer from that curry! I will be on the lookout for the recipe that might tempt him to eat paneer.. Gonna try this one too. :)
